Two Birds Energy Balls Recipe
A great on the go energy packed snack. The perfect alternative to sugar loaded granola bars. These are super easy and quick to make but also very tasty so they wont be around for long!
Energy Balls Recipe (Makes about 8 balls)
- 1 mug of medjool dates (about 10 dates)
- 1⁄2 mug of raw almonds
- 2 tbsps of Two Birds healthy breakfast cereal
- 1 tbsp of dried cranberries
- 1tsp of cinnamon
- Dried coconut flakes to cover balls
- Place the raw almonds in a food processor and blitz until well ground
- Remove the pitts from the dates
- Add the pitted dates and all other ingredients (except the coconut flakes) to the food processor and blitz until mixture begins to stick together
- Remove the sticky mixture from food processor and mix well by hand
- Roll the mixture into balls
- Rolls the balls in the shredded coconut
- Place the balls in the freezer for 1 hour to set and the store in fridge
